My mother-in-law got this Costco poppy seed muffin recipe from a friend and she knows how much I like Costco muffins, so she shared the recipe with me. These poppy seed muffins are very quick and easy to make.

I like to eat muffins in the morning, especially when I am in a hurry to get out of the door. These poppy seed muffins make great breakfasts and snacks. These muffins also freeze really well, so you can make a big batch and freeze them for later.

Costco Poppy Seed Muffins
Makes: 24 muffins (standard size)

  • 3 c. all purpose flour
  • 2  cup sugar
  • 1 tb poppy seeds
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 3 eggs
  • 1 1/2 cup milk
  • 1 c. oil (can sub applesauce)
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp almond flavoring

Directions:

1. Mix all ingredients in a mixing bowl.
2. Fill greased or lined muffin tins with batter.
3. Bake muffins at 350 degrees for 20 to 25 minutes or until done.
4. Cool in pan 10 minutes before removing.

This poppy seed muffins recipe tastes very close to the Costco poppy seed muffins that I used to buy from Costco.
